Healthy No-Bake Breakfast Brownie Recipe - (Vegan + Gluten Free + Refined Sugar Free)

So, you want brownies for breakfast. Who doesn’t? However, brownies aren’t always the best choice… until now. These healthier chocolate delights are a perfect morning pick-me-up (or afternoon snack or dessert) when you want something quick and delicious.

These are no-bake, so there really isn’t any reason to not give them a try!

Go ahead, feed that sweet tooth!


The Recipe

Time allotment

Prep Time: 15 minutes

Cooking time: None!

Total Time:

Yield: 9 x 9 pan of healthy brownies

Cooking Utensils

  • Bowl

  • Spatula

  • Spoons

  • Food processor

  • Measuring cups / spoons


Ingredients

  • 1 cup (g) pitted medjool dates

    • You can add a few more dates if you prefer it sweeter

  • 1/4 cup (g) almonds*

  • 1/4 cup (g) walnuts*

  • 1/4 cup (g) pecans*

  • 1/2 cup (g) peanut butter

  • 1/2 cup (g) cacao powder

  • 1 tsp alcohol-free vanilla extract

  • Pinch of salt

*You may substitute specific nuts for one type if you prefer (i.e. 3/4 cup walnuts, or 3/4 cup pecans)


Instructions

  1. Line a 9x9 inch pan with parchment paper - OR - grease a 9x9 inch pan with preferred neutral oil

  2. In a food processor, combine the pitted dates, nuts, and peanut butter

  3. To the mixed-up paste, add the cacao powder, 1 tsp alcohol-free vanilla extract, and pinch salt

  4. Mix everything with the food processor until well combined

  5. Transfer the mixture to the lined 9x9 inch pan, and press into the mixture so it is evenly spread out

    1. It will be easier if you wet your hands - OR - place parchment paper on top

  6. Cover the pan and refrigerate for minimum 1 hour, or until solid

  7. Cut into pieces… or don’t.

  8. Enjoy!
