Canadian Maple French Toast Recipe (Gluten Free)
This recipe, inspired by the famed French breakfast staple and Canadian flavours, can be used with either regular brioche, or a gluten-free alternative!
When I first found out I was gluten sensitive, I instantly gave up any foods that contained “bread” - no more sandwiches, no more croutons, and definitely no more French Toast. However, gluten free toast has come a long way, and when prepared correctly as a vessel for other food preparation, it can taste spectacular.
Here is my foolproof Canadian Maple French Toast recipe that can be used on any type of bread. However, when used with gluten-free brioche, transforms it into a symphony for your tastebuds. Trust me, this easy recipe will become a favourite in no time!
The Recipe

Total Time: 10-15 minutes
Yield: 2 gluten-free slices of French Toast

Ingredients
2 slices of bread
Preferably brioche, as it is naturally sweeter and more soft
My favourite gluten-free bread is “Promise Gluten Free Authentic Brioche Soft Loaf”
2 egg yolks
1 tbsp Demerara sugar - OR - brown sugar
1/4 cup (60ml) milk
I used skim milk, but whole milk does taste better!
1 tbsp maple syrup
1 tsp cinnamon
1 tsp vanilla extract
2 squares of butter
I usually use one square of butter per slice of brioche
One square of butter = Length/ Height = 1 inch |Width = 1/4 inch (see image below)
1 banana (topping)
Other suggested toppings: chocolate sauce, Nutella, raspberries, blueberries, whipped cream, etc…
Instructions
Using two bowls, separate 2 egg whites from the 2 egg yolks
Put the egg whites aside
Whisk the 2 egg yolks until they become frothy
Add in 1 tbsp brown sugar, 1 tsp vanilla extract, 1 tsp cinnamon, 1 tbsp maple syrup, 1/4 cup (60ml) milk and gently whisk the new mixture together
Dip in one slice of the gluten-free bread (preferable brioche).
Make sure to coat both sides of the slice in the mixture!
Turn on your stovetop, and in a saucepan on low-heat, add 1 square of butter
When the butter in the saucepan begins to melt, make sure to tilt the saucepan so it coats the entire surface
Add in the first slice of bread
Cook the bread for about 2 minutes (on low heat) and flip with a spatula
Cook the bread for another two minutes, and flip again to repeat step 9/ 10 if necessary
When the bread has become golden and toasted, remove the slice from the pan and onto a plate
Pour some maple syrup onto the French Toast, and top it with pieces of a sliced banana
Repeat steps 6-12 with the other slice of bread, and enjoy!
Helpful Tips:
Make sure to only use the egg yolks
Brioche bread tastes the best for this type of recipe
Make sure to be generous with the butter - it greatly adds to the taste and texture of the final product!
Stay nearby the pan while the bread is cooking - you don’t want it to burn!
