Chocolate Dipped Almond Flour Biscuits (Gluten Free + Vegan)

The current self-isolation climate has left me without certain ingredients. Given that there is not as much variety at the grocery stores, and that I try to limit my trips to once a week, I have been getting crafty with new recipes in the kitchen.

This biscuit is perfect to dip into a cup of tea. It’s healthier than a traditional cookie, and it keeps you feeling full thanks to the almond flour. This is an easy recipe to whip up in minimal time, with minimal ingredients!

The Recipe

Time allotment

Prep Time: 10 minutes

Cooking time: 10-12 minutes

Total Time: 20-22 minutes

Yield: 12-16 biscuits

Cooking Utensils

  • Spatula

  • 2 bowls

  • Whisk - OR - Handheld/ Upright mixer

  • Measuring cups

  • Measuring spoons

  • Cooking spray - OR - parchment paper


Ingredients

Dry Ingredients

  • 2 cups (192g) almond flour

  • 1 tsp baking powder

  • 1 tsp salt

  • 1 cup (175g) dark chocolate

Wet Ingredients

  • 1/2 (55g) cup vegan butter - OR - 1/2 (125ml) avocado oil

  • 1/4 cup (50g) brown sugar

  • 1/4 cup (52g) granulated sugar

  • 2 tsp maple syrup

  • 2 tbsp vanilla extract

Instructions

  1. In one bowl, add 1/4 cup (50g) brown sugar, 1/4 cup (52g) white sugar, 2 tbsp maple syrup, 2 tbsp vanilla extract, and 1/2 cup (55g) vegan butter (or 1/2 cup avocado oil)

  2. Mix all the ingredients together with a whisk/ handheld mixer

  3. In a separate bowl, add 2 cups (192g) almond flour, 1 tsp baking powder, and 1 tsp salt

  4. Mix all the ingredients together with a spatula

  5. While stirring, gradually pour small sections of the almond flour mixture into the wet mixture until everything is well combined

  6. Line a baking pan with either parchment paper - OR - cooking. spray

  7. Place dollar-sized balls of dough on the pan

  8. Bake the biscuits in the oven at 350°F (180°C) for 12-15 minutes

    1. They will be golden brown and flattened when finished

  9. Allow the biscuits to cool for a minimum of 15 minutes

  10. While the cookies are cooling, melt 1 cup (175g) dark chocolate

    1. You can use a microwave (increments of 30 seconds until melted), or a glass bowl placed over a simmering pot of water

  11. Dip one half of the biscuits into the melted dark chocolate

  12. Place the biscuits on a cooling rack, or on a glass plate

  13. Allow the chocolate-dripped biscuits to harden for a minimum of 20 minutes before digging into your cookie (or don’t, it’s your life!)

  14. Enjoy!

Helpful Tips:

  • If you choose to use a microwave, melt the dark chocolate in 30 second increments, and stir between each one - it will make all of it melt more uniformly
