Welsh Cakes - Gluten Free Recipe 🏴
This past St Davids Day, I. surprised Joel by making Welsh Cakes! However, these ones had a twist - they were gluten free!
You don’t need to let your gluten sensitivity stop you from enjoying this delicious recipe. This is an easy, quick recipe to whip up, and it’s sure to become a favourite afternoon snack / breakfast staple in no time!
The Recipe
Time allotment
Prep Time: 10 minutes
Cooking time: 5-10 minutes
Total Time: 15-20 minutes
Yield: 10-12 Welsh cakes
Cooking Utensils
One large bowl
Upright mixer - OR - handheld mixer - OR - whisk
Measuring cups
Measuring spoons
Skillet - OR - girdle - OR - frying pan
Ingredients
Wet Ingredients
1/2 cup (115g) butter
1 egg
A heaping 1/3 cup (80g) brown sugar
1 tsp vanilla extract
Avocado oil - OR - butter (for cooking)
I prefer avocado oil as I find it allows the Welsh cakes to cook longer without burning
Dry Ingredients
*1 cup (150g) preferred baking flour
*If you’re using gluten free flour without xanthan gum, add 1/2 tsp xanthan gum
1/2 tsp baking powder
1/2 tsp salt
1/2 cup (80g) Thompson raisons (or sultanas)
Instructions
In a large bowl, cream together until smooth 1/2 cup (115g), 1/3 cup (80g) brown sugar, 1 egg, and 1 tsp vanilla.
Mix in 1 cup (150g) gluten free flour, 1/2 baking powder, 1/2 xanthan gum, and 1/2 tsp salt
Fold in 1/2 cup (80g) Thompson Raisins - OR - Sultanas
You may add more or less depending on your preference
Mix together only until properly blended
Easy Version
7. Put a skillet, frying pan, or a girdle onto a stove
8. Add some avocado oil (or butter)
9. Take out a golf ball sized amount of dough, roll into a ball, and flatten with your hands
10. When warm, place a flattened disk of dough onto the pan
11. Allow to cook until slightly golden on one side, and then flip
12. Allow to cook until golden onto the opposite side, and then take off the pan
13. Dust the freshly cooked Welsh cake with some brown sugar, and voila!

Hard Version
7. Roll all of the dough into a ball on a well-floured surface, place into a bowl with plastic wrap on top, and put into the fridge for 1 hour
8. Take mixture out of the fridge
9. Dust some flour onto a clean surgace
10. Use a rolling pin/ bottle of wine to roll out the dough until it is 1 inch thick
11. Use a cookie cutter to cut out pieces of the dough
12. Put a skillet, frying pan, or a girdle onto a stove
13. Add some avocado oil (or butter)
14. Put the cut pieces of dough onto the pan
15. Allow to cook until slightly golden on one side, and then flip
16. Allow to cook until golden onto the opposite side, and then take off the pan
17. Dust the freshly cooked Welsh cake with some brown sugar, and voila!
18. Enjoy!
