Healthy Vegan Molasses Dark Chocolate Chip Cookies Recipe (Vegan + Gluten Free + Refined Sugar Free)
Molasses Cookies, without the animal products. These have fooled many a person as to their lack of animal products. Trust me - you can’t tell!
The Recipe

Baking time: 15 minutes
Total Time: 25 minutes
Yield: 12 vegan molasses cookies
Cooking Utensils
One big bowl
One big spoon
Measuring cups + spoons
Baking tray
Parchment paper/ Oil to grease pan
Ingredients
Wet Ingredients
3 tbsp coconut oil (melted)
(Optional) Extra for greasing the pan
2 tsp vanilla extract
1 tsp cinnamon
1 tsp ginger
1/3 cup (60g) coconut sugar
2 tbsp molasses
1/4 cup (36g) arrowroot starch - OR - tapioca starch
1 1/2 cups (144g) almond flour
1/2 tsp baking soda
1/2 tsp baking powder
1 vegan dark chocolate bar, cut up
I used Hu Salty Dark Chocolate bar, 60g
Instructions
Preheat oven at 350°F (180°C)
In a large bowl, mix together 3 tbsp melted coconut oil, 1/3 cup (60g) coconut sugar, 2 tbsp molasses, and 2 tsp vanilla.
Add in 1 1/2 cups (144g) almond flour, 1/4 cup (36g) arrowroot starch, 1 tsp cinnamon, 1 tsp ginger, 1/2 tsp baking soda, and 1/2 tsp baking powder
Fold in cut-up dark chocolate pieces
Line a baking tray with parchment paper - OR - rub with a thin layer of coconut oil
Create golfball sized portions of dough, and place evenly onto baking tray
Bake the vegan cookies in the oven at 350°F (180°C) for 14-16 minutes (they should be a rich caramel colour, as seen below)
Allow the cookies to cool for a minimum of 15 minutes before digging in…
