3-Ingredient Banana Pancakes Recipe (Vegetarian Gluten Free)

Ingredients
Core Ingredients
1 ripe banana
2 eggs
1 tsp baking powder
(Optional) 2 tsp cinnamon
(Optional) 1 tsp vanilla extract
other Optional flavouring
1 tsp matcha powder
1 tsp cocoa powder
1 tsp nutmeg
Instructions
Peel 1 banana and add it into a bowl
Crack 2 eggs into the same bowl
Add 1 tsp baking powder
With a fork, mash all of the ingredients together
Make sure there are no large clumps of banana
(Optional step) Add in 1-3 tsp of flavouring
I like to add in 2 tsp cinnamon, and 1 tsp vanilla extract
Add some oil to a saucepan on low-medium heat
When the saucepan has heated up, place 1/4 (60ml) cup of the pancake batter on it
Allow the pancake to cook for 3-5 minutes on one side, and then carefully flip it over with your spatula
Banana pancakes are not as structurally strong as flour pancakes, so be careful when flipping it over
The banana pancakes will be ready to flip when they are a deep brown colour - use your spatula to check periodically while it’s cooking
When your pancake is finished, take it off the saucepan and put it onto a plate
Repeat steps 7-9 until you have used up all of your batter
Allow each pancake to cool for 2 minutes, then add the toppings of your choice, and voila! You’re done!
