Fresh Sesame and Lime Coleslaw
Nothing is more perfect for a spring or summer meal, than a refreshing coleslaw!
This coleslaw recipe is less hearty and filling than mayonnaise versions (look out for my mayo coleslaw recipe coming soon…), which makes it a perfect light snack or side dish for any meal.
The key to this dish is using fresh ingredients, and taking your time to finely chop the base ingredients. If you do that, I guarantee you will love this dish! Let’s get into it!
The Recipe

Sauce Time: 5-10 minutes

Yield: 1 large bowl (~3 cups) of coleslaw

Microplane (for ginger)

Ingredients
Base Ingredients
1 cup (~50g) carrots, finely chopped
1 cup (~90g) white cabbage, finely chopped
1 cup (~180g) red cabbage, finely chopped
Sauce Ingredients
2 tbsp sesame oil
1 tbsp rice vinager
1 tbsp maple syrup
1 tsp sesame seeds
Half a lime juice
1 tsp ginger, finely grated
1 tsp pepper
1 tsp salt
Instructions
In the large bowl, mix together the finely chopped 1 cup (~50g) carrots, 1 cup (~90g) white cabbage, and 2 cups (~180g) red cabbage (base ingredients)
In the small bowl, stir together 2 tbsp sesame oil, 1 tbsp rice vinegar, 1 tbsp maple syrup, 1 tsp sesame seeds, 1 tsp pepper, and 1 tsp salt (sauce ingredients)
In the same small bowl, squeeze in the juice of half a lime
In the same small bowl, use a microplane to grate in 1 tsp ginger
Pour the sauce ingredient mixture into the base ingredients mixture
Stir everything together, then enjoy!
