Vegan Oatmeal Granola Cookies - (Gluten Free)
Granola is yummy, cookies are yummy. These are yummy.

The Recipe

Ingredients
1 cup (227g) vegan butter
1 1/2 cup (260g) brown sugar
1/4 cup maple syrup
1 tbsp Bob’s Red Mill Egg Replacer (+ 2 tbsp water) - OR - 1/4 (61.2g) cup of unsweetened apple sauce
Equivalent of 1 egg
1 tsp vanilla extract
1/4 cup molasses
1 tsp baking soda
1 1/2 cup (180g) preferred baking flour
If using gluten free flour without xathan gum, add 1 tsp xanthan gum
2 cups (180g) rolled oats
1 tsp salt
1/4 cup vegan dark chocolate
1/4 cup dried cranberries
1/4 cup sliced almonds
1/4 cup sunflower seeds
Instructions
Preheat oven to 350°F (180°C)
In a bowl, cream together 1 cup (227g) vegan butter, 1 1/2 cup (260g) brown sugar, 1/4 cup maple syrup, and 1 tsp vanilla extract
Mix in 1 tbsp egg replacer (or 1/4 (61.2g) cup apple sauce)
Mix in 1/4 cup molasses
In a separate bowl, mix together 1 1/2 cups (180g) flour, 2 cups (180g) rolled oats, 1 tsp salt, and 1 tsp baking soda
Slowly pour and stir 1/4 portions of the dry ingredients into the wet ingredients, until fully combined
Fold in 1/4 cup vegan dark chocolate chips, 1/4 cup dried cranberries, 1/4 cup sliced almonds, and 1/4 cup sunflower seeds
Line a baking pan with either parchment paper - OR - cooking spray
Place golf ball sized portions of dough on the pan
Bake the cookies in the oven at 350°F (180°C) for 10-12 minutes
Allow the cookies to cool for a minimum of 15 minutes before munching
