Coffee Chocolate Chip Cookies Recipe (Gluten Free Option)

These coffee chocolate chip cookies are the ultimate buzzed up desser.
The Recipe

Total Time: 30-31 minutes

Ingredients
3/4 cup (115g) butter
1/2 cup (150g) brown sugar
3/4 cup (100g) white sugar
1 tsp vanilla extract
2 eggs
2 1/2 cups (300g) preferred flour
If using gluten-free flour, add 1 tsp xanthan gum
1 1/2 cups (180g) almond flour
2 tbsp instant coffee powder
1 tsp baking soda
1 tsp baking powder
1 dark chocolate bar, cut up
Instructions
Preheat oven at 350°F (180°C)
In a large bowl, cream together 3/4 cup (115g) butter, 1/2 cups (100g) brown sugar, 3/4 cup (150g) white sugar, and 1 tsp vanilla.
Beat in 2 eggs until mixture is light and fluffy
Add in 2 1/2 cups (300g) flour, 1 1/2 cup (180g) almond flour, 2 tbsp instant coffee powder, 1 tsp baking soda, and 1 tsp baking powder
Mix together until well combined
Add in cut-up chocolate pieces
Gently stir all of the ingredients together until just blended
Line a baking tray with parchment paper - OR - cooking spray
Create golfball sized portions of dough, and place evenly onto baking tray
Bake the biscuits in the oven at 350°F (180°C) for 9-11 minutes
Allow the biscuits to cool for a minimum of 15 minutes
Dig in and enjoy!
