Skor Almond Cookies Recipe (Gluten Free)

Upright mixer - OR - handheld mixer
Measuring cups + spoons

Cooking spray/ parchment paper
Ingredients
Wet Ingredients
3/4 cup (115g) butter
1 tsp almond extract
3/4 cup ( (150g) brown sugar
1/2 cup (100g) granulated sugar
1 egg
Dry Ingredients
2 (192g) cups almond flour
2 (272g) cups baking flour
If using gluten-free flour without xanthan gum, add 1 tsp xanthan gum
1 tsp baking soda
1 tsp baking powder
~24 Skor pieces - or- Skor chocolate chips
Instructions
Preheat oven at 350°F (180°C)
In a large bowl, add 3/4 cup (115g) butter, 3/4 cup (150g) brown sugar, 1/2 cups (100g) white sugar, and 1 tsp almond extract.
Mix until smooth
Add 1 egg
Mix until well combined
Add in 2 (272g) cups baking flour, 2 cups (192g) almond flour, 1 tsp baking soda, and 1 tsp baking powder
Mix until well combined
Line a baking tray with parchment paper - OR - cooking spray
Create golf ball sized portions of dough, and add 1 Skor piece to each (alternatively: stir Skor chocolate chip pieces into the batter before creating balls of dough)
Evenly space each ball of dough onto baking tray
Bake the biscuits in the oven at 350°F (180°C) for 9-11 minutes
Allow the biscuits to cool for a minimum of 15 minutes, then…
