Healthy Café-Style Bread Loaf (Gluten Free + Vegan Option)
Yes, the title is a mouthful.
What is “Café-style” bread, you ask? Well, it’s that sweet, dense bread that resembles a cake you can buy per slice at cafés!

Anyhow, as someone who is o̶b̶s̶e̶s̶s̶e̶d̶ responsibly fond of cafés, I felt the need to find a similar recipe to make at home.
My mum and I sat down, and after a number of failed batches, we finally found a foolproof recipe for a café-style bread loaf (my friends call it “cake”) that happens to be both vegan and gluten free! Woohoo! Most people who aren’t gluten intolerant cannot notice the lack of gluten, either 😉
The Recipe
Time allotment
Prep Time: 20 minutes
Baking Time: 45-50 minutes
Total Time: 65 - 70 minutes
Yield: One big ol’ bread loaf
Cooking Utensils
One large bowl
One medium bowl
Handheld mixer - OR - whisk
Measuring cups
Measuring spoons
15-20 cm bread mould
Cooking spray/ parchment paper
Oven
Ingredients
Wet Ingredients
1/2 cup (100g) brown sugar
1/2 cup (150g) apple sauce
*2 eggs (or 4 egg whites)
*Vegan Substitute: 2 tbsp of chia/ flax seeds mixed in 6 tbsp of hot water 20 minutes prior to baking
3/4 cup (180ml) avocado oil - OR - 1 cup (227g) butter
1 tsp vanilla
3 tbsps orange juice
Dry Ingredients
1 cup (125g) flour
If using gluten free flour without xanthan gum, add 1 tsp xanthan gum
1 cup (120g) almond flour
2 tsp baking powder
1 tsp baking soda
1 tsp salt
Optional: dried fruits, berries, or chocolate chips
Instructions
Preheat oven to 350°F (180°C)
In a large bowl, add flour, almond flour, baking soda, baking powder, and salt
Whisk together mixture until well blended
In a medium bowl, add the eggs
*Vegan substitute: add the chia seeds
Whisk together the eggs
Skip this step if you are using chia seeds
Add the brown sugar, and apple sauce
Whisk together
Add the avocado oil, orange juice, and vanilla
Slowly pour the wet mixture into the dry mixture
Whisk everything together
Optional Step: Add in the dried fruits/ berries/ chocolate chips
Spray a bread mould with cooking spray OR rub butter over the edges of a bread mould
Pour mixture into bread mould
Place it into oven and bake for 45-50 mintues
After taking the mixture out, let it cool for 20-30 minutes before eating
