Rainbow Vanilla Funfetti Cookies Recipe (Gluten Free Option)

These confetti-inspired cookies are fluffy, sweet, and surprisingly perfect to dunk into milk. They are very simple, and most of the flavour comes from the vanilla extract (I recommend using a high quality product), and the mix of different sugars.

The Recipe

Baking time: 15-16 minutes
Total Time: 30-31 minutes
Yield: 22-24 Funfetti cookies

Ingredients
Wet Ingredients
3/4 cup (115g) butter
2 tsp vanilla extract
1/2 cup (100g) powdered sugar
1 cup (200g) granulated sugar
2 eggs
Dry Ingredients
3 (300g) cups flour
Gluten Free Substitution: 3 (300g) cups gluten free baking flour (I used Bob’s Red Mill 1-to-1 Baking Flour)
If using gluten-free flour without xanthan gum, add 1/2 tsp xanthan gum
1 tsp baking powder
1/4 tsp salt
1/2 cup rainbow sprinkles
Instructions
Preheat oven at 350°F (180°C)
In a large bowl, cream together 3/4 cup (115g) butter, 1/2 cups (100g) powdered sugar, 1 cup (200g) granulated sugar, and 2 tsp vanilla.
Add 2 eggs, and mix until well combined
Add in 3 cups (300g) baking flour, 1/4 tsp salt, and 1 tsp baking powder
Mix together until just combined
Add in 1/2 cup rainbow sprinkles (or more… you make it as multicoloured as you want)
Gently stir all of the ingredients together until just blended
Line a baking tray with parchment paper - OR - cooking spray
Take golf ball sized portions of dough, and roll them together between your palms, then evenly space each ball onto baking tray
Bake the biscuits in the oven at 350°F (180°C) for 12-13 minutes
Take them out, and allow the Funfetti Cookies to cool for a minimum of 15 minutes
