Easy 3-Ingredient Flourless Peanut Butter Cookies
It needs to be said: these are the most simple cookies to make!
This beginner-friendly recipe is delicious on it’s own, but also allows budding chefs to get creative with additions and substitutions. These cookies are quite filling thanks to the peanut butter, and they’re naturally gluten free since they contain no flour.
Either create these cookies as written, or play around with the ingredients. The key is to keep a 1-1-1 ratio between the peanut butter, egg, and desired sugar / sweetener (1 cup peanut butter - 1 cup sugar - 1 egg).

The Recipe
Time allotment
Prep Time: 5 minutes
Baking time: 10-11 minutes
Total Time: 15-16 minutes
Yield: 20 peanut butter cookies
Cooking Utensils
Bowls
Upright / Handheld mixer - OR - Whisk
Measuring cups + spoons
Baking tray
Cooking spray/ parchment paper
Ingredients
1 cup (240g) peanut butter
Smooth or crunchy
1 cup (200g) brown sugar
If a less dense texture is desired, substitute 1/2 cup (100g) of brown sugar for 1/2 cup (100g) granulated sugar
1 egg
(Optional extra additions): 1 tsp vanilla extract, 1/4 tsp salt, 1/2 cup (80g) chocolate chips
Instructions
Preheat oven at 350°F (180°C)
In a medium bowl, cream together 1 cup (200g) brown sugar, and 1 egg
If you prefer a less dense cookie, substitute 1/2 cup (100g) brown sugar for 1/2 cup (100g) granulated sugar
Mix in 1 cup (240g) peanut butter
(Optional) Add in extra additions if desired
Line a baking tray with parchment paper - OR - cooking spray
Take out small sized portions of dough, and roll them together between your palms, then evenly space each ball onto baking tray
Use a fork to give your cookies some visual appeal!
Bake the biscuits in the oven at 350°F (180°C) for 10-11 minutes
Take them out, and allow to cool for a minimum of 15 minutes
