Easiest Vegan Peanut Butter Cookies
It’s peanut butter (no jelly) time!
These Vegan Peanut Butter Cookies are soft, tender, and completely melt-in-your-mouth. This is an excellent beginner recipe (or lazy recipe), as it takes minimal time and effort. As well, rest easy, as they are free from any animal products!
Another bonus point of these cookies is that they are flourless, which makes them naturally gluten-free. However, don’t let that discourage you - you cannot tell these have no gluten in them! They are a good alternative for those who don’t want to bake with flour, or who can’t eat traditional flour.
The Recipe
Time allotment
Prep Time: 5 minutes
Baking time: 10-11 minutes
Total Time: 15-16 minutes
Yield: 20-22 vegan peanut butter cookies
Cooking Utensils
Bowls
Upright / Handheld mixer - OR - Whisk
Measuring cups + spoons
Baking tray
Cooking spray/ parchment paper
Ingredients
3/4 cup (180g) peanut butter
Smooth or crunchy
3/4 (84g) cup almond flour
1/4 cup maple syrup
1/4 cup (100g) brown sugar*
If you want less sugar, substitute 1/4 cup (50g) brown sugar for 1/2 cup (50g) almond flour
Instructions
Preheat oven at 350°F (180°C)
In a medium bowl, mix together 3/4 cup (180g) peanut butter, 3/4 (84g) cup almond flour, 1/4 cup maple syrup, and 1/4 cup (100g) brown sugar*
If you prefer a cookie with less sugar, substitute 1/4 cup (50g) brown sugar for 1/2 cup (50g) almond flour
Line a baking tray with parchment paper - OR - cooking spray
Take out small sized portions of dough, and roll them together between your palms, then evenly space each ball onto baking tray
Bake the biscuits in the oven at 350°F (180°C) for 10-11 minutes
Take them out, and allow to cool for a minimum of 15 minutes
