Almond Fudge Cookie Recipe (Gluten Free)
Everyone loves a chocolate fudge cookie!
Even if flour isn’t something you can tolerate, you can still enjoy this delightful treat with this easy, and tasty recipe. Enjoy!

Ingredients
1/2 cup (104g) butter
1/4 cups (50g) granulated sugar
1/4 cups (50g) brown sugar
1 egg
1 1/4 cup (120g) almond flour
1/4 cup (25g) cocoa powder
1 tsp vanilla extract
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1 milk chocolate bar, cut-up
I used 40g of chocolate; add more or less to suit your preference!
Instructions
In one bowl, cream together 1/2 (104g) butter, 1/4 cup (50g) brown sugar, 1/4 cup (50g) granulated sugar, and 1 tsp vanilla extract
With a whisk or a handheld mixer, mix all of the ingredients together until well blended
Whisk in 1 egg
In the same bowl, add in 1 1/4 cup (120g) almond flour, 1/4 cup (25g) cocoa powder, 1/2 tsp baking soda, 1/2 tsp baking powder, and 1/4 tsp salt
Gently stir all of the ingredients together until just blended
Fold in cut-up chocolate pieces
Take out golf ball sized portions of dough, and roll them together between your palms
Line a baking pan with either parchment paper - OR - cooking spray
Place 1 inch wide balls of dough on the pan
Bake the biscuits in the oven at 350°F (180°C) for 11 minutes
Allow the biscuits to cool for a minimum of 15 minutes so you don’t burn your tongue (like I did…)
