Almond Fudge Cookie Recipe (Gluten Free)

Everyone loves a chocolate fudge cookie!

Even if flour isn’t something you can tolerate, you can still enjoy this delightful treat with this easy, and tasty recipe. Enjoy!

Total Time: 17 minutes

Yield: 12-14 gluten-free flourless chocolate chip cookie recipe

Cooking Utensils

  • One bowls

  • Spatula

  • Whisk - OR - Handheld Mixer

  • Measuring cups

  • Measuring spoons


Ingredients

  • 1/2 cup (104g) butter

  • 1/4 cups (50g) granulated sugar

  • 1/4 cups (50g) brown sugar

  • 1 egg

  • 1 1/4 cup (120g) almond flour

  • 1/4 cup (25g) cocoa powder

  • 1 tsp vanilla extract

  • 1/2 tsp baking soda

  • 1/2 tsp baking powder

  • 1/4 tsp salt

  • 1 milk chocolate bar, cut-up

    • I used 40g of chocolate; add more or less to suit your preference!


Instructions

  1. In one bowl, cream together 1/2 (104g) butter, 1/4 cup (50g) brown sugar, 1/4 cup (50g) granulated sugar, and 1 tsp vanilla extract

  2. With a whisk or a handheld mixer, mix all of the ingredients together until well blended

  3. Whisk in 1 egg

  4. In the same bowl, add in 1 1/4 cup (120g) almond flour, 1/4 cup (25g) cocoa powder, 1/2 tsp baking soda, 1/2 tsp baking powder, and 1/4 tsp salt

  5. Gently stir all of the ingredients together until just blended

  6. Fold in cut-up chocolate pieces

  7. Take out golf ball sized portions of dough, and roll them together between your palms

  8. Line a baking pan with either parchment paper - OR - cooking spray

  9. Place 1 inch wide balls of dough on the pan

  10. Bake the biscuits in the oven at 350°F (180°C) for 11 minutes

  11. Allow the biscuits to cool for a minimum of 15 minutes so you don’t burn your tongue (like I did…)

  12. Enjoy!
